The tops of Autumn Pak Choi, saved from making Kyogle Kimchi with garlic and spring onion from Roseberry Growers, blended with dried birdseye chilli and tomato lacto juice and left to ferment. This mix is then liquified and blended with some shio koji and fermented again until the flavour is right on!
It really is something and thanks to Deep Ecology Australia for sharing some Shio Koji with us. This has made a very interesting flavour.
This sauce ads a pleasant bit of chilli and umami to anything, backed by the base flavour profile of the Kimchi Tomato combo. Amazing on eggs, great on chicken, works with veg and mushrooms as good as anything else!
